Teatime is a delightful time of the day. Catching up with family and sipping on some warm, sweet tea-absolute bliss! And its even better when there is something served with the tea, like cake. This cake is an excellent choice for tea time.


With a subtle sweetness, this cake is the perfect choice to add that little something extra to your teatime. It is rich, moist and flavourful. Best of all, it is easy to make and will surely have everyone reaching for seconds.

I have prepared a basic cake batter, into it I have folded in tutti frutti. Tutti frutti is made from raw papaya. You can find it in Asian stores.

TUTTI FRUTTI TEA CAKE RECIPE

PREPARATION TIME : 20 MINUTES

BAKING TIME 1 HOUR AND 10 MINUTES

CAN BE SERVED TO 7 TO 8 PEOPLE

INGREDIENTS (All the ingredients are measured in a 250 ml cup)

  • 1 & 1/4 cups of tutti frutti
  • 2 cups of all-purpose flour
  • 2 leveled teaspoons of baking powder
  • A pinch of salt
  • 3/4 cup of butter at room temperature
  • 3/4 cup of sugar
  • 1 teaspoon of vanilla extract
  • 3 eggs at room temperature
  • 3 tablespoons of full fat milk at room temperature

METHOD

  • Pre heat the oven to 165° C
  • Sift together the flour, baking powder and the salt into a bowl
  • Beat together the butter and sugar until they are mixed well. Add the vanilla and cream the mixture until light and fluffy
  • Add the eggs one at a time and beat (use the medium speed)
  • Now add the dry ingredients alternately with the milk in two or three batches
  • Mix it with a low speed until well combined (do not over beat)
  • Fold in the tutti frutti
  • Transfer into a prepared 8 inch cake tin, smooth evenly with a spoon or a spatula
  • Bake it for 1 hour and 10 minutes or until a toothpick inserted comes out clean

NOTES

When the cake is baked take it out from the oven immediately, let it rest in the cake tin for for few minutes (say 7 to 8 minutes), unmold the cake and cool it completely on a wire rack.

Store the cake in a clean and dry container. It will stay fresh at room temperature for up to 5 days.

Baking time may vary a bit in each oven, so after an hour and five minutes stay near the cake and check now and then.
