SUPER EASY POTATO CURRY

If you want to make a quick dinner or , a busy day morning, this potato curry will come in handy. This is an easy and simple one-pot dish that is prepared within few minutes and with fewer ingredients and less time. This curry can be served with Indian dishes like dosa, idli, appam, chapati, roti, naan, poori, idiyappam, etc.


Potato is a handy vegetable, it can be cooked together with many other vegetables also. This is one veggie that is available in our kitchen most days so can make a curry easily at any time, especially when we are in a hurry.


This easy peasy potato curry can be prepared within minutes. I have used very few ingredients and less oil in this recipe. I made this curry in a pressure cooker so that it saves time. Coconut oil is used here for seasoning. You can use other vegetable oil also.

SUPER EASY POTATO CURRY RECIPE:

PREPARATION TIME : 10 MINUTES.

COOKING TIME : 15 MINUTES.

SERVES : THREE PEOPLE.

INGREDIENTS:

POTATO – 2 MEDIUM SIZED.

GREEN CHILI – 2 TO 3 .

ONION – 1 MEDIUM SIZED.

CORIANDER POWDER – 1 AND A 1/2 TABLE SPOON.

RED CHILI POWDER – 1 TEASPOON.

TURMERIC POWDER – 1/4 TO 1/2 TEASPOON.

CUMIN POWDER – 1/2 TEASPOON.

CURRY LEAVES – FEW.

MUSTARD SEEDS – 1/2 TEASPOONS.

OIL – TWO TABLE SPOONS.

SALT – TO TASTE.

METHOD:

1.Wash and peel the potatoes and cut them into medium sized cubes.Keep the potato cubes in water just to prevent it from oxidization.

2.Cut the onion into small pieces.

3.Split the green chilies into two.I have split them into two but you can cut them into small pieces also.I f you don’t want the curry to be too spicy you can leave them as whole.

4.Now put all the ingredients into a pressure cooker.Add enough water.Do not add too much water.Make sure the water level is just 1 cm above the ingredients.

5.Add in all the spice powders to it along with little salt.Cook this in medium heat until you hear two whistles.

6.when you hear two whistles switch off the stove.Wait for few minutes.Do not open the lid of the pressure cooker until all the pressure inside the cooker is cool down completely.When you lift the whistle of the pressure cooker a little and if there is pressure coming out that means still there is pressure inside.

7.When the pressure is completely gone open the lid .Give it a good stir so that the potato is mashed well.If you wish you can leave few pieces as it is.

8.If the curry is too thick you can add warm water .Check the salt and add more if needed.

TEMPERING:

Heat oil in a thick bottomed pan.When the oil is hot add in the mustard seeds into it.When the mustard seeds crackles add in the curry leaves.Leave it for 15 to 20 seconds and switch off the stove.

Add this into the curry and bring it to boil and switch off the stove.

The curry is ready to serve.

NOTE:You can add three cloves of garlic along with the vegetables when you cook them.A simple curry but comes in handy when we are really busy.
