Spicy scrambled egg recipe, easy to make and tastes delicious…

Eggs are a delicious pack of protein. They are versatile and they can be dished up many ways into scrumptious meals poached eggs, fried eggs, hard-boiled, scrambled eggs and many more.


This is one of my favorite egg recipes because of how easy it is to make. Frequently I make this recipe for dinner and sometimes for breakfast also.
This spicy stir fry recipe is simple, delicious and it can be prepared in a jiffy. It comes in handy for a speedy dinner or during the busy mornings.


In this recipe, first I beat the eggs with turmeric powder, black pepper powder and a little bit of salt and then added into the sauteed ginger paste and finely chopped onions.

I have added chopped green chili pieces to it to give more spiciness to the dish. The coriander leaves added to it give extra flavor and aroma. They also make the dish colorful.


This scrambled egg can be paired up with bread, chapati and pita bread.

SPICY INDIAN SCRAMBLED EGG RECIPE

PREPARATION TIME : 5 TO 10 MINUTES

COOKING TIME : 10 MINUTES

CAN BE SERVED TO 2 PEOPLE

INGREDIENTS

  • 4 eggs beaten
  • 1 or 2 green chili finely chopped
  • 1/2 a teaspoon of turmeric powder
  • 1 medium onion cut into small pieces
  • 1 teaspoon of coarsely ground black pepper
  • 1 teaspoon of ginger paste
  • A hand full of finely chopped coriander leaves
  • 2 tablespoons of cooking oil
  • Salt to taste

METHOD

  • In a bowl, crack open the eggs, add the turmeric powder, black pepper powder and a little bit of salt. Mix well and keep aside.
  • Over a medium heat, add two tablespoons of oil in a pan and saute the ginger paste for 2 minutes. Then add the finely chopped onions into it and saute until the onions are soft.
  • Add the finely chopped green chilies and saute, add a little bit of salt.
  • Add the egg mixture into the sauteed onion and mix. Check salt if needed add more.
  • Scramble the egg mixture using a spatula. When the egg mixture is half done add the finely chopped coriander leaves and mix.
  • Scramble until it is fully cooked and serve it hot.

NOTE

I have added one green chili in this recipe, you can add one more if you like it spicier.

Make sure the temperature of the stove is in medium when you scramble it.

You can adjust the amount of pepper powder also according to your spice level. I have added one teaspoon in this recipe. You can add a bit more or less.
