When I have less time to prepare dinner after a busy day, and if I have fresh parsley in my fridge, I often prepare this fast and fabulous recipe. To add more crispness to the recipe add brown breadcrumbs.
SPAGHETTI WITH PARSLEY, TOMATOES AND BREAD CRUMBS RECIPE
Quick and easy recipe that is perfect for quick dinner on a busy day. The combination of tomato, parsley, olive oil and freshly ground pepper is delicious, and the bread crumbs add a small crunchiness with each bite.

COOKING TIME : 15 MINUTES
CAN BE SERVED TO 2 PEOPLE
INGREDIENTS
- 200 grams spaghetti
- 1/2 to 3/4 cup( in a 250 ml cup) of finely chopped fresh parsley
- 1 big tomato seeded and cut into small pieces
- 1/2 to 3/4 teaspoon of freshly ground black pepper
- 3 tablespoons of bread crumbs
- 3 tablespoons of olive oil
- Salt to taste
- 5 Tablespoons of spaghetti water
METHOD
- Cook the spaghetti according to the package instructions, drain it and keep it aside, after reserving some water from it.
- Heat oil in a pan and saute the bread crumbs until crispy over medium heat.
- Add the finely chopped parsley and tomato pieces and sauce for few seconds. Add the spaghetti water and mix well. Season with salt and pepper.
- Add the spaghetti and mix with the crumb mixture until well combined. Serve it hot.
NOTE:
You can use any bread crumbs, but brown bread crumbs add more crunchiness to the recipe.
