It is easy to make, all you have to do is just toss in all the ingredients, add the seasoning and mix them. It tastes great, is super healthy and looks colorful too.

If you like to include some plant-based protein in your diet then this is a perfect choice because kidney beans are packed with protein. The corn added to this recipe is also nutritious.

The dressing added is tangy and spicy and it adds more flavor to the salad. It is perfect to serve as a starter before dinner. It can be prepared for potlucks, picnics, or even as a full meal.

RICE AND BEAN SALAD RECIPE

PREPARATION TIME : TIME TO COOK THE RICE, SWEET CORN AND BEANS

MAKING TIME : 10 MINUTES + REFRIGERATION TIME

CAN BE SERVED TO 2 PEOPLE

INGDREDIENTS

FOR THE DRESSING

  • 2 tablespoons of olive oil
  • 1 teaspoon of lemon juice
  • 1 teaspoon of white vinegar
  • 1/2 teaspoon of sugar
  • 3/4 to 1 teaspoon of salt
  • 1/4 teaspoon of mustard powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of red chili powder
  • 1/4 teaspoon of red chili flakes
  • 1/2 teaspoon of dried oregano

FOR THE SALAD

All the ingredients are measured in a 250 ml cup

All the ingredients must be at room temperature

  • 1 cup of cooked basmati rice
  • 1/2 cup of cooked sweet corn
  • 1/2 cup of cooked kidney beans (rajma)
  • 1 medium tomato seeded and cut into small pieces

METHOD

  • To make the salad dressing, place all the salad dressing ingredients in a small jar, put the lid on and shake well.
  • Add the rice, corn, kidney beans and tomato pieces into a salad bowl and toss them gently.
  • Into it add the salad dressing and mix gently.
  • Refrigerate for an hour and serve. You can serve it immediately too. Both tastes good.

NOTES

You can add more red chili powder and chili flakes if you like your salad spicier. If you are serving it to kids you can reduce a bit.

If you are using dried kidney beans, soak them overnight and then cook.

You can serve the salad as soon as you prepare it or refrigerate it for an hour and serve. Both taste good.
