People all around the world love sandwiches. It has no cultural or age barriers. It is accepted as a quick and healthy meal that can be taken on the move.

This is a perfect sandwich to take on the move, for breakfast, or to pack in lunch boxes and it can be prepared quickly and easily. This simple sandwich is not only perfect for busy mornings or as a lazy day breakfast, but you can have it any time of the day.

Making the sandwich is as fun as having one. I have buttered and toasted the bread before I placed the filling in it. This helps the sandwich from being too dry and adds flavor to the sandwich. It also helps the bread to not go soggy because of its moist filling.

This flavorful and healthy sandwich is great to pack in kids’ lunch boxes or to take on trips because they are easy to make and comfortable to eat. When you prepare it for kids you can reduce the amount of pepper powder added to it.

You can prepare the base at night and make the sandwich the next day morning. In that case, finish it off within four hours of preparing it.

POTATO AND EGG SANDWICH RECIPE

PREPARATION TIME : 15 TO 20 MINUTES

TO MAKE THE SANDWICH : 10 TO 15 MINUTES

YOU CAN MAKE 5 TO 6 SANDWICHES

INGREDIENTS

  • 2 medium potatoes boiled, peeled and mashed
  • 2 hardboiled egg yolks rubbed into a smooth paste
  • 1/2 a teaspoon of coarsely ground pepper
  • 1 tablespoon of olive oil
  • 2 to 2 and a 1/2 tablespoons of thick cream
  • 1 table spoon of freshly chopped coriander leaves
  • 1/2 a teaspoon of salt or as per the taste
  • 10 slices of bread
  • A little bit of butter (to spread on the bread)

METHOD

  • Boil the potatoes, peel off their skin and mash them well.
  • Rub the yolks of the hardboiled eggs into a smooth paste and add into the mashed potatoes.
  • Add the pepper, salt, olive oil and the thick cream and mix well until you get a perfect smooth paste.
  • Add the chopped coriander leaves and fold together.
  • Butter two slices of bread, add the filling on the bottom slice and place the other slice of bread on top.
  • Trim the crusts. Cut into triangles and serve.

NOTE

You can adjust the amount of pepper powder, according to your spice level you can add more or less.
