This is a quick stir fry recipe, and it is simple and can be prepared quickly. It requires only those ingredients that are always available in your pantry.
In this recipe, I have sautéed the vegetables in butter, seasoned them with pepper and salt and added the cooked pasta.

PASTA WITH VEGETABLES RECIPE

It can be served as dinner or lunch. Can be packed in lunch boxes too.
PREPARATION TIME : 10 + TIME TO COOK THE PASTA
COOKING TIME : 20 TO 25 MINUTES
CAN BE SERVED TO 4 PEOPLE
INGREDIENTS
- 1 medium carrot cut into small pieces
- 15 green beans cut into 1 inch size pieces
- 1 small zucchini cut into small pieces
- 1/2 (250 ml cup) a cup of frozen green peas
- 1 medium tomato, seeded and cut into medium pieces
- 1/2 a teaspoon of coarsely ground black pepper
- 1/2 a teaspoon of salt or as per the taste
- 1 tablespoon of butter
- 1/4 teaspoon of sugar
- 2 ( in a 250 ml cup) cups of penne pasta
- A little bit of pasta water
METHOD
- Cook the pasta according to the package instructions. Drain and rinse it with normal water and then drain the water again and keep it aside.
- In a thick bottomed pan, over a low heat, add the butter, carrot pieces and the sugar. Sauté for two or three minutes.
- Into it add the beans and sauté for another 7 to 8 minutes. Continue cooking on a low heat.
- Add the green peas and cover and cook until they become soft (it may take about 5 to 6 minutes). Stir it in between so that the vegetables won’t get scorched at the bottom of the pan.
- Add the zucchini pieces and sauté for another two minutes. Then add the pepper powder and salt. Mix well.
- Add the tomato pieces and stir.
- Add the pasta into the cooked vegetables. Stir well to combine the vegetables and the pasta well.
- If the pasta is too dry add 2 teaspoons of pasta water and mix. Cook it for another 2 minutes on a low heat and then switch off the stove.
- Serve it hot.
NOTE
You can either use fresh or dried green peas. If you are using dried green peas cook it first and then add it into the pasta.
You can add 1 or 2 table spoons of water while cooking the vegetables if required.
You can replace butter with olive oil.
You can add a little bit more pepper powder if you like.
Do not cook the zucchini for a very long time, it will be soggy and will not taste good. It tastes good when it is crispy.
