This is an authentic dessert from Kerala which is one of the southern states of India.
In Kerala, this creamy and rich dessert is served in grand feasts called Sadhya.

They serve the Sadhya in banana leaves. It has rice, curries, and different varieties of vegetable side dishes. At the end of the feast, they serve desserts. This is one of the famous desserts which is served.

Ada is rice flakes made from rice flour. Olden days homemade ada was used to prepare this dessert. But now it is easily available in Indian supermarkets.

Rice flakes cooked in full-fat milk with sugar, cardamom powder and ghee give a pleasant flavor and aroma to the dish.

You can make gatherings and parties at your home memorable by serving a tasty cup of this dessert.

In this recipe, I cooked the ada first and drained the water. Then, I added it into the milk and reduced the mixture until it thickens. Then I added sugar and cardamom powder for aroma. In the end, I added a little bit of ghee to add more richness and flavor.

You can serve it either warm or cold. You can prepare it the previous day and serve it cold the next day, it also tastes incredible.

PALADA PRADHAMAN RECIPE

PREPARATION TIME: 5 MINUTES

TIME TO COOK THE ADA : 15 TO 20 MINUTES

TO MAKE THE PRADHAMAN : 2 & 1/2 HOURS

CAN BE SERVED TO 5 PEOPLE

INGREDIENTS

  • 150 grams of rice ada
  • 1&1/2 liters of full fat milk
  • 12 tablespoons of sugar
  • 1/2 teaspoon of cardamom powder
  • 2 teaspoons of ghee

METHOD

  • Wash the ada well and cook it in plenty of water until soft. Drain and keep it aside
  • Add the milk in a broad, thick-bottomed vessel and heat it until it starts to boil.
  • When the milk starts boiling add the cooked ada into it and reduce the temperature of the stove to its lowest.
  • Keep stirring it otherwise the milk may get scorched at the bottom.
  • Cook the ada in the milk, by stirring it every 2 to 3 minutes for 2 hours.
  • Add the sugar and mix.
  • Add the cardamom powder and ghee and mix well.
  • Cook it for a few more minutes.
  • Switch off the stove and serve it either warm or cold

NOTE

You can add chopped bananas on top when you serve.
