This is a simple curry that can be served with chapatti, white rice, roti etc.This super-easy veggie curry is creamy, rich and satisfying.Prepared with few ingredients yet not less in taste.

 

Ladies  finger also called‘Okra’ resembles like a slim finger ,may be that’s why it is called ‘Ladies’ finger’. It is also known as Bhindi.With ladies’ finger lot of dishes can be made, like ladies’ finger fry, stir fry, stuffed ladies finger etc.We can also make curries with this ,like sambar, ladies finger  with tamarind curry….,these are usually served with white rice ,idlis and dosas.But  this curry is little different from them . It is thick and creamy  and can be served with chapatis ,roties and  white rice as well.

Ladies’ finger is a rich source of many nutrients like vitamin B6, dietary fiber, and folic acid.It also helps in controlling high Blood Pressure ( BP ). It also controls cholesterol and constipation. . Proper digestion reflects through a healthy-looking skin. Vitamin C found in okra helps maintain a younger looking skin. It aids in repairing the body tissues. This, in turn, helps keep our skin younger and also makes it look more vibrant. It also Improves immunity,improves eyesight….

To select good quality ladies’ finger

Always look for smaller pods because they are tender . They taste better than the larger ones, which are tough and stringy too, While the smaller pods are generally tender, they should not be very soft.

Look out for bright green-colored  unblemished  pods. These are fresh and are not rotten from inside.

  • Before cooking, thoroughly wash and rinse the whole ladies’ fingers well with water.
  • After washing, pat it dry completely, using a dry towel.
  • Always trim the ends before adding it to your dish.

Ladies’ finger curry recipe

Due to the presence of nutrients, it is good to include ladies’ finger in our regular diet. With its less cholesterol and calorie content, it can be eaten in considerable amounts too.

PREPARATION TIME: 30 min :COOKING TIME: 25 min:SERVES : 3

Ingredients:

  • Ladies finger – Here I have taken 15 medium sized ladies fingers.
  • Onion -1 big.
  • Tomato – 2 small .
  • Ginger garlic paste – 1/2 teaspoon each.
  • Red chili powder – 1 teaspoon.
  • Coriander powder – 2 teaspoons.
  • Turmeric powder – 1/2 to 3/4 teaspoon.
  • Garam masala –  1 teaspoon.
  • Kashmiri chili powder-1/2 teaspoon.
  • Cashew nuts -10 , Soaked for one hour and ground to a smooth paste.
  • Coriander leaves – few for garnishing.
  • Oil – 4 to five table spoons.
  • salt – to taste

Method:

Heat one tablespoon of oil in a pan and saute’ the chopped onions in that until soft,when the onions are soft add tomatoes to it and saute’ well until the they are cooked,add ginger garlic paste to this and stir it well,until the raw smell of the ginger and garlic is completely gone.

 

when the raw smell of the ginger and garlic are completely gone, add turmeric powder,red chili powder and coriander powder to this sauteed ingredients and mix them well.Make sure the stove is in low flame now, otherwise the spice powders will be burned.Now along with this add in  the garam masala and saute’ well . let this cool for few minutes .When it is completely cooled grind it into a smooth paste.

 

Split the ladies’ fingers and slice them into medium sized pieces.Fry it with little oil in a pan ,until the sliminess of the vegetable is gone.

 

Again take another thick bottomed pan and heat two tablespoons of oil in it ,then put the prepared masala paste into the oil .Saute’ it well in low flame for 4 to 5 minutes.Into this goes the ladies finger.

 

Keep it close and cook for 5 minutes .Then pour in the cashew paste into it,add salt , let this cook in low flame for some time.

 

Garnish it with some coriander leaves , chili oil and a spoon full of cashew paste.

To make Chili oil:

Heat a table spoonful oil in very low flame ,put 1/2 teaspoon of Kashmiri chili powder into it ,switch off the flame very quickly otherwise the chili powder will be burned.

Serve it hot with your favorite bread.

4.Put the ladies finger into the curry paste,add the cashew paste  add salt and let cook for some time.Garnish with chili oil, little cashew paste and coriander leaves .
