This easy recipe is my favorite. The spread is made with crispy cucumbers, shallots, flavorful cream cheese, and mayonnaise. The freshly ground black pepper powder gives it spiciness. The cream cheese and mayonnaise combined with cucumbers and shallots give an excellent flavor combination everyone is sure to love!
INGREDIENTS USED IN THIS RECIPE
Cream cheese and mayonnaise give creaminess and flavor to the sandwich. They also help to bind all the ingredients together.
Cucumbers: use fresh and stiff cucumbers to make this sandwich.
Shallots: give flavor, aroma and a small crunchiness.
Black pepper: Gives spiciness to the sandwich.
Sugar and salt give flavor.
Bread: You can use white bread or wheat bread
HOW TO MAKE EASY CUCUMBER SANDWICH
To make this sandwich, first peel and grate the cucumbers. Squeeze well and remove the water from the grated cucumbers. Keep aside.
Into a bowl, add mayonnaise, cream cheese, pepper powder, salt, sugar and the finely chopped shallot pieces and mix well.
Add the grated cucumber into this cream cheese mixture and mix well.
Spread between toasted bread and serve.
Variation
Mix all the ingredients other than the cucumbers. Instead of grating the cucumbers, cut them into thin slices.
Spread this cream cheese mixture on a bread slice, layer the cucumber pieces over the mixture and top with another slice of bread.

2 medium cucumber peeled and grated
2 or 3 shallots cut into very small pieces
1/4 teaspoon of coarsely ground black pepper
2 pinches of sugar
1/4 teaspoon or required amount of salt

RECIPE NOTES
Squeeze the cucumber well before adding into the cream cheese mixture, otherwise the filling will be too watery and difficult to spread on the bread.
I wouldn’t prefer this sandwich for lunchboxes because it may become soggy.
You can also serve this spread with bread varieties like chapatis, pita bread etc.
You can grate the cucumber, squeeze and store in the fridge before few hours. Take it out and squeeze if any extra water is there. Then mix with the cream cheese mixture and make the sandwich.
You can serve the sandwich as it is, or you can cut off the crust.
