A bowl full of fresh vegetables topped with a flavourful dressing is very pleasing to the eyes, a delight for the palate and nutritious for the body.
This quick and casual vegetable salad, made with crisp cucumber, fresh radishes, and tangy cherry tomatoes, is light and refreshing.
It can be served with lunch or dinner along with meat dishes, bread and soup varieties.
It tastes good when you serve it immediately after you prepare it. If you like it cold, chop the vegetables and refrigerate them in separate containers for a few hours before you serve. Mix them up and serve immediately.
In this recipe, I have mixed some cucumber pieces, radishes, and cherry tomatoes and seasoned them with a simple and tasty dressing.
I have added chili flakes to give a bit of spiciness to the salad.
CUCUMBER SALAD WITH RADISH AND CHERRY TOMATOES RECIPE

INGREDIENTS
- A small pack of radish (around 7 to 8 radishes) cut into thin slices
- 250 grams of cherry tomatoes cut diagonally into 2 pieces
- 2 cucumbers cut into slices
- 1/2 teaspoon of red chili flakes
- A small mint sprig to garnish (optional)
SALAD DRESSING
- 1 tablespoon of olive oil
- 1 teaspoon of lemon juice
- 1/2 teaspoon of salt
- 1/4 teaspoon of sugar
METHOD
- To make the salad dressing, place all the salad dressing ingredients in a small jar, put the lid on and shake well. Keep it aside.
- Add all the vegetable pieces in a mixing bowl. Pour the salad dressing over them and toss.
- Drizzle the red chili flakes over the vegetables and top it up with a mint sprig.
- Serve it immediately.
NOTE
You can cut the vegetables and keep them separately in the refrigerator few hours before use. If you are doing this, do not mix them. Mix them just before serving.
