It is topped with a crispy cookie crumble. Another ingredient that makes this cake flavorful is the lemon zest. It gives the cake its unique flavor and aroma.
I have creamed together butter and sugar until fluffy. This will incorporate air into the butter. Then I have added the eggs to it and mixed. Into this emulsion I have added the zest of two lemons and then the dry ingredients and then topped it with the cookie crumble then baked it.

BAKING TIME : 45 MINUTES
CAN BE CUT INTO 8 MEDIUM SIZED PIECES
INGREDIENTS
ALL THE INGREDIENTS WERE MEASURED IN 250 ML CUP
3/4 cup of all purpose flour
1/4 cup of almond flour
One teaspoon of baking powder
Two eggs at room temperature, beaten
Zest of two lemons
3/4 cup of caster sugar
3/4 cup butter at room temperature
FOR THE TOPPING
Four table spoons of all purpose flour
Two tablespoons of chilled butter
Two tablespoons of caster sugar
METHOD
STEP 1. Preheat the oven to 180 °C.
STEP 2. Using a hand blender cream together butter and sugar. Then add the beaten eggs and blend. When the eggs are mixed well add the lemon zest and mix well.
STEP 3. Sift the flour and the baking powder together into a bowl. Add it to the butter mixture and mix until well mixed.
STEP 4. Add the almond flour and mix until all the ingredients are well mixed.
STEP 5. Spoon it into a prepared 1 lb loaf tin and smooth the top surface using the back of a spoon.
TO MAKE THE TOPPING
STEP 6. Sift the flour into a bowl. Add the sugar to it and mix. Add the butter to it and using your finger tips, rub the butter with the flour mixture until it becomes crumbly.
STEP 7. Sprinkle over the top of the cake.
STEP 8. Bake it for 40 to 45 minutes or until a skewer comes out clean when inserted into the center of the cake.
STEP 9. Allow the cake to cool in the tin for for 5 minutes before removing it. When it is cool, slice it and serve it.
NOTE:
If you do not have almond flour, take some whole almonds and powder them and use.
