This salad recipe with a creamy dressing is one of my favorites.
It is loaded with crunchy broccoli, crisp apples, carrots and chia seeds. The creamy yogurt dressing brings everything together.
It is packed with nutrients and is one of the best ways to enjoy fresh broccoli.
This salad is really easy to make. You can make this salad in the morning and pack in a lunch box for the office, school or picnics.
It is a sweet and tangy salad and it has a crunchy texture.
Ingredients used
Broccoli: I have used 3/4 cup of broccoli pieces; you can add 1 cup of broccoli pieces. I have blanched them; you can use them raw if you like.
Carrots: I have used a small carrot. Make sure you peel and slice the carrot.
Apple: I have used both green and red apples in this recipe. You can use only red apples if you like. Green apples give a bit of tanginess to the salad.
Chia seeds: It is packed with nutrients and adds crunchiness.
Yogurt: I have used regular yogurt; you can also use plain Greek yogurt.
Sugar and Lemon juice: Make the salad sweet and tangy.
Variations
You can use plain Greek yogurt instead of yogurt.
You can also make this salad using only red apples.
I have blanched the broccoli, but you can add it as raw.

Ingredients
5 to 6 tablespoons of yogurt
2 teaspoons of sugar
1 tablespoon of chia seeds soaked for 2 hours
1 teaspoon of lemon juice
1 small green apple cut into small pieces
2 medium red apples cut into small pieces
3/4 cup of broccoli pieces, blanched
1 small carrot cut into small pieces
Directions
- Soak the chia seeds for 2 hours and keep aside.
- Blanch the broccoli. Let it cool completely.
- In a salad bowl, add the yogurt, sugar and chia seeds and mix well.
- Into it add the lemon juice and mix.
- Into this mixture add the chopped vegetables and fruits and mix.
- Serve it immediately or refrigerate for an hour or two and serve.

Recipe Notes
You can soak the chia seeds at night if you are making this salad in the morning. Soak and keep in the fridge until morning.
You can serve it immediately after preparing it or you can refrigerate for one or two hours and serve.
When you blanch the broccoli, do not blanch it for too long. Make sure it does not become soft, let it be crisp.
