Simple and tasty rice recipe that you can pair with curries.

Rice is one of my pantry staples. I prepare rice dishes every day for lunch or dinner.

Rice is a versatile grain. It is nutritious and inexpensive. You can easily pair it up with meat, fish, or fruit. Quick, easy and tasty meals can be prepared with it.

Almond and raisin rice is a simple and easy rice recipe that can be prepared with a handful of ingredients. The ingredients required are always present in your kitchen pantry.

Almonds and raisins together with the spices make this simple rice flavourful.

In this recipe, I have toasted the almonds and slivered them. I have also fried the raisins in ghee (clarified butter). Then I added them to the rice which had been cooked with spices. I added lemon juice while cooking the rice for a small tanginess. You can also use butter to fry the raisins.

ALMOND AND RAISIN RICE RECIPE

PREPARATION TIME : 10 MINUTES

COOKING TIME : 30 MINUTES

CAN BE SERVED TO 4 PEOPLE

INGREDIENTS

A 250 ml cup is used

  • 1/4 cup of raisins
  • 2 cups of basmati rice
  • 25 – 30 almonds toasted and slivered
  • 2 teaspoons of lime or lemon juice
  • 4 cardamom pods
  • 3 cloves
  • 2 bay leaves cut into pieces
  • 1 small cinnamon stick broken into small pieces
  • 1 & 1/2 teaspoon of black pepper powder
  • 1 teaspoon of garam masala
  • 2 teaspoons or the required amount of salt
  • 4 & 1/2 cups of water
  • 1 or 2 teaspoons of ghee or butter

METHOD

  • Wash the rice thoroughly, drain and keep aside.
  • Toast the almonds, sliver them and keep aside.
  • Over a low heat, in a frying pan, add the ghee and fry the raisins until they puff up. Keep aside.
  • In a thick bottomed vessel, add water, cloves, cardamom, cinnamon stick and the bay leaves. Bring it to a boil.
  • When the water starts boiling, add the salt.
  • When it reaches rolling boil, add the rice.
  • Add the pepper powder and the garam masala powder and mix gently.
  • Let it be on a high temperature until it starts boiling. When it starts boiling, reduce the temperature of the stove to its lowest.
  • Add the lemon juice and mix gently.
  • Cover and cook until the rice is fully cooked.
  • Stir in between.
  • When the rice is completely cooked, add the fried raisins and the slivered almonds and mix gently. You can use a fork to mix.
  • Serve it warm with any non vegetarian or vegetarian curries.

NOTE

The raisins will puff up and then shrink after some time. That’s ok.

If you do not have ghee, you can also use butter to fry the raisins. Heat the butter on a low temperature and fry the raisins until they puff up.

Stir the rice gently otherwise it may break

Keep the temperature of the stove low throughout the cooking
